Tiramisu Chia Pudding

I have never been a fan of chia pudding...until now. I modified a recipe I found on pinterest from the website the delicious plate and wow! So good I'm craving it! It takes a few extra steps, so double it if you want more prepped for the week. Full of fiber, healthy fats and protein, this is worth trying!



2 cups favorite milk of your choice

(almond, fair life, low-fat, soy...)

1/2 cup chia seeds

1 cup greek yogurt

1-2 scoops unflavored protein powder

1/4 cup of maple syrup

1/2 teaspoon vanilla extract

2 tablespoons cocoa powder

2 tablespoons strong coffee


Topping: zero sugar cool whip




  1. mix chia seeds with milk, let sit 1 minute or so

  2. add yogurt, protein powder, and maple syrup. mix well

  3. divide mixture into three different bowls equally

  4. bowl one: add the vanilla extract and mix

  5. bowl two: add the cocoa powder and mix

  6. bowl three: add the coffee (and a table spoon of bowl two for color) and mix

  7. cover bowls and place in the refrigerator over night

  8. In the morning, have three-four containers ready. add even layers to containers from each bowl. (eg: I added the cocoa mixture first and spread, then coffee mixture and spread, then top layer was the vanilla)

  9. top each serving with a tablespoon or so of zero sugar cool whip

  10. Make sure when you eat it you get a little bit of each layer and ENJOY!!


*note the easier version here: if you don't feel like doing all these steps to make it have the layered look, you could mix all the ingredients together well, portion into 3-4 serving containers, then put them in the refrigerator overnight. Top with cool whip right before you serve!
