THE sauce

So far I have used this sauce for a tofu, veggie & raw cashew sheet pan meal, as well as a salmon and zucchini sheet pan meal! It is so good and holds so many possibilities.

Some ideas include: to marinate meat for grilling, or for chicken, peppers, & onions (sheet pan) over rice. Use on soba noodles with roasted veggies and chickpeas...

Recipe as follows:

1/4 cup soy sauce, liquid aminos, or tamari

1 teaspoon white miso paste

1 teaspoon mustard

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 1/2 tablespoon maple syrup

2 large garlic cloves, minced

1/2 inch fresh ginger, minced

2 tablespoons water

1 teaspoon cornstarch


  1. In a small saucepan over medium heat, add your sauce ingredients

  2. Whisk until it simmers and thickens slightly, 2-3 minutes

  3. Remove from heat and set aside till ready to use.


*You can make the sauce ahead of time without the cornstarch. Store in the refrigerator until ready to use, then follow the directions above (adding cornstarch when ready to heat).

*I added a few tablespoons of the sauce to the sheet pan meals covering everything before cooking the meal. I added the rest of the sauce after the meal was cooked, before serving.
