Easiest Pumpkin Pancakes

1 cup of milk (any kind, cow, almond, oat...)

1 egg (for extra protein, can be omitted)

1/2 cup pumpkin

1/4 teaspoon of pumpkin pie spice

1 cup pancake mix (I like Kodiak)

pure maple syrup, for serving


  1. In a large bowl, mix the milk, egg, pumpkin, and pumpkin pie spice. Add the pancake mix and stir just to combine- batter is lumpy.

  2. Coat a gridle or large non stick skillet with cooking spray and set it over medium-high heat. When the pan is hot, spoon the batter onto the skillet using 1/4 cup batter for each pancake.

  3. Cook until bubbles form on top of the pancakes, 2-3 minutes. Then use spatula to flip the pancakes and cook them until golden brown on the other side.

  4. Serve with some maple syrup (walnuts and some cinnamon optional)
