Creamy Red Lentil Soup

Vegan, Dairy Free



Ingredients:

1 1/2 cup uncooked red lentils

2 3/4 cup low sodium vegetable broth

3 small Roma tomatoes

1/2 large yellow onion

2 garlic cloves

2 tbsp. tomato or marinara sauce

1 1/2 tsp. cumin powder

1 tsp. salt

1/8- 1/4 tsp. cayenne pepper

1 can full fat coconut milk

1-2 cups baby spinach leaves (or other leafy green)


Optional Toppings: chopped avocado or sunflower seeds


Directions:

  1. Prepare Vegetables: chop tomatoes, onions, and crush/chop garlic

  2. Rinse red lentils

  3. Add all ingredients to a crockpot (except coconut milk and spinach)

  4. Stir to combine

  5. Cook on low 6-8 hours, or high 4-5 hours

  6. Add coconut milk and rinsed baby spinach leaves to the crockpot for the last 15-20 minutes of cooking.

  7. Enjoy! This also tastes good topped with chopped avocado, or sunflower seeds
